Sous Chef – Sienna Kitchen & Bar
Sienna Kitchen & Bar are looking for an experienced and ambitious Sous Chef to join the team at our beautiful restaurant within Flannels, Meadowhall. This flagship site offers a casual, all day, modern brasserie dining experience, within a next generation, luxury fashion retail environment. Our opening hours are Monday - Friday 10.00am - 9.00pm, Saturday 9.00am - 8.00pm and Sunday 11.00am - 7.00pm.
The Food & Drink
Our menu takes inspiration from across the world, showcasing quality ingredients, prepared and cooked with an eye on seasonality and freshness. The food offer is innovative and Confident including contemporary takes on Benedicts, French Toast and Steak Frites. Other dishes include Mixed Sashimi, Lamb Dumplings and Blackened Miso Salmon making up a diverse and exciting menu. Complimenting the food offer, our drinks menu is comprised of premium signature cocktails, along with great coffee and wine.
This is an exciting opportunity for an ambitious and passionate Sous Chef. You will share our commitment to delivering an outstanding customer experience and take real pride in ensuring quality and consistency of every dish produced. You will love working with fresh ingredients from around the world and learning new processes and techniques. You will lead by example and enjoy sharing your experience and ideas with others.
As Sous Chef you will:
ensure quality and consistency of food during all stages of production;•be fully responsible for the overall operation, progress and timing of various sections within the Kitchen;
demonstrate an awareness of financial performance including recipe costing and GP targets;
ensure appropriate stock levels are maintained and ordering is optimised;
participate in the HACCP procedure according to the company’s Food Safety Management System;
lead by example and uphold professional standards, at all times, providing a source of knowledge and inspiration to all kitchen staff; and
have total accountability for the day to day running of the kitchen service in the absence of the Head Chef.
