We are currently recruiting for a Senior Sous Chef to join an award-winning kitchen team in on the outskirts of Cardigan Wales.

The property has 76-bedroom hotel with occupancy at a high level throughout the year. The busy kitchen serves meals throughout the day to hotel guests and non-residents.

In addition to the preparation and production of meals to a high standard, the Senior Sous is expected to assist and support the Head Chef in the effective management, control, and administration of the Kitchen department to the specified standards of the hotel.

Kitchen management duties include staff management, menu design and costing, stock ordering and control, compliance with all food safety & health and safety polices.

The weekly shift pattern is five days out of seven, average of 50 hours a week. Salary is negotiable, £32,000 - £35,000 a year subject to experience. In addition to enrolment in the company pension scheme, other benefits include a share of staff gratuities monthly, uniform which is also laundered, free use of Spa facilities, and 10% discount on Spa treatments.

Subject to availability, they may be able to offer staff accommodation.

Candidate Role:

·Assist to oversee the day to day running of the kitchen

·Assume overall responsibility of the kitchen in the absence of the head chef

·Develop menus alongside senior management

·Train, develop and mentor the existing team

·Ensure consistent quality in all food produced

·Work alongside head chef and GM to maintain guest satisfaction

·Ensure the kitchen’s food safety and hygiene protocols are maintained

Candidate Specification:

·Must have a background in fresh food

·Experience as a senior brigade member is essential

·A strong junior sous chef may be considered

·Must be financially competent and be able to work to budget

·Be flexible in your approach

·Can work independently and manage a team

·Must have all up to date training and qualifications

·Ensure stock rotation and labelling of both in process and completed goods are carried out
